Chocolate chip cookies

ingredients

  • 1 1/3 cup Gluten-free Flour (I use Bob's Red Mill, or King Arthur 1:1 flour)
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1/2-1 tsp sea salt
  • 1/2 cup butter
  • 1-2 tbsp of milk
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 cup chocolate chip

directions

  1. In a bowl, mix all dry ingredients together: flour, sugar, baking soda, and salt
  2. Melt butter in a pan. When it starts to brown, take it off the stove immediately.
  3. Add wet ingredients: milk, egg, vanilla to the butter and mix.
  4. Mix the dry ingredients into the wet ingredients, using a spatula to fold until combined. Add the chocolate chips in the process.
  5. Cover the dough and let it rest for 1 hour at room temperature.
  6. Preheat the oven to 350° and line a baking tray with a baking mat.
  7. Mold the cookies into round balls and place on the mat, decently spread apart.
  8. Bake for 10-15 minutes (check at 10 and continue to 15 if necessary).
  9. Remove from the mats and let cool.

notes

  • Feel free to just use brown sugar for this recipe; the aroma and texture will just change a bit.
  • While I put an exact measurement for the vanilla extract, always put as much as you want! No one really measures vanilla :)
  • Add more or less milk to perfect the consistency of your dough!
