Egg fried rice

ingredients

  • 1 carrot
  • 1/2 of a red onion
  • 1 to 2 stems of green onion
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of chili powder
  • 1/2 to 2 tablespoons of gluten-free soy sauce
  • 1/2 teaspoon of coconut aminos
  • 1/2 teaspoon of minced garlic
  • 1/2 to 1 tablespoon of sesame oil
  • 2 eggs
  • 1 cup of rice

directions

  1. Mince the carrot, red onion, and the white part of the green onion and put in a bowl
  2. Add the salt, black pepper, and chili powder to the vegetables
  3. In a separate bowl mix the soy sauce, coconut aminos, and minced garlic to make a sauce
  4. Place a pan over medium heat
  5. Add some sesame oil and let it slightly heat
  6. Add the minced vegetables to the pan
  7. Add the egg(s) to the pan and use a spatula to move/scramble
  8. Set the heat to low and let it sit for 1 minute
  9. Add the precooked rice 
  10. Mix
  11. Add the sauce
  12. Mix
  13. Transfer the fried rice to a bowl
  14. Garnish with the green part of the green onion
  15. Enjoy!!

notes

  • You can increase or decrease the number of eggs
